OK I just have to share a couple of my dinner secrets. About a year ago I bought one of these choppers. I think I bought it on sale at Kohls for about $20. It is probably one of my best investments I have ever made. I love the way it chops and easy to clean!! It's so easy my little one usually does all the chopping for me. It comes with 2 different size of choppers this one is the smaller version. This is the one I use for onions, celery, green pepper & carrots.

The other night I made a chicken stir fry. It was so late and I was so tired and hungry that I just said forget the veggies. So we had chicken and rice stir fry. My husband asked "where are the veggies" and I very kindly told him in the frig!
Well that got me thinking if I just had
chopped up veggies on hand I would use them more. I buy fresh and sometimes chop a bunch at a time and store them in Tupperware containers. But after awhile they get a little slimy. So I thought what about freezing them in the ice cube trays like when I used to make my own baby food.

So I put Dean to work a chopping!

Once I had about a cup or so chopped we scooped them in to trays and set them in the freezer.

So the next day I took them out of the freezer and put them in freezer bags and back into the freezer.


Then I just pop them into the pan depending on how many I need and saute away. The carrots didn't stay together so great so next time I might either add a little water to each one or maybe spray the top of each one with a little nonstick spray then freeze.
My sister in law is looking for recipes to freeze before her 5th baby arrives. I thought this might make dinner time a little easier. I also found a cookbook in my stash that I have enjoyed. I first picked it up at the library then later bought a copy to keep. It is Robin Millers Quick Pix Meals. Apparently she also has a show on the food network . Her recipes are very good but I have difficulties cooking them because of my husbands food allergies. But what I like the best about the book was the first chapter where she tells you all about the well stocked pantry and 5 sauces that you should have on hand. She talks about her Meal Kits, Morph It and Dinner Express. It's so much more than just recipes she talks a lot about prep time and our precious time available and how to mange it best. How to make fresh and healthy meals fast!
Another one of my new finds is this Salsa that I found at Meijers. It's the Meijer Gold brand.
I first bought the Black Bean and Corn Salsa. It is fabulous!!! As you can see the jar is almost empty. Then I tried Lime Salsa which has this incredible Lime flavor that you would not expect from a canned product. So today I bought Chipotle Salsa and Mango Peach Salsa. I will let you know how those rate on my list. Please if you like Salsa and have a Meijers near by you must give these a try!!!! And with only 10 -15 calories per serving you'll put in on everything!!!

This past week I have been making wraps with these salsas. I buy the LaTortilla Factory Whole Wheat Low Carb Tortillas either plan or Green Onion. Each wrap is about 50 calories. I spread low fat garden vegetable cream cheese about a teaspoon on each tortilla then add about 2 teaspoons of salsa, fresh spinach maybe a little red onion wrap it up and dig in.
Another one I like to make is take Vegetarian Refried beans and spread about 1 tablespoon of beans on a wrap add the Black Bean and Corn Salsa some Fresh Spinach roll up and dip into a little low fat sour cream. With less than 100 per wrap I can usually eat 2 per meal and it's plenty to eat.

So a bunch of stuff has been going on lately. But nothing too exciting.
Lots of baseball and vacation time. We had a great time at Silver Lake. We had super weather and I had just enough alone time and family time. I'm well rested and ready for the rest of the summer.
Baseball is almost over and as crazy as it is I will miss it. In a couple of weeks conditioning for Football and Cross Country begin.
I have not been stamping at all lately but I'm hoping to jump right in soon. I had a big order to complete right before vacation for a wedding. With that done I feel free to create again without feeling guilty for not working on the place cards.
Here are just a few pictures from our vacation the first one is Dean in the jeep heading out on
the dunes.

These are of the boys racing down the sand dunes and jumping into the lake.


We also did a little Geocaching with friends. We found both of the ones we were looking for but not before our fearless leaders took us way off course. Running up and down the dunes is tough work.

The pictures of the jeep in water are not of our jeep. But I'm told this a pretty cool thing in guy world. Since I had a million pictures of this event I thought I should share. Just in case some of the ladies husbands are looking over the shoulder they will have something to look at.

That's all for tonight it's late and we just got back from the movies. The boys thought I needed a movie for my birthday we went and saw Hancock. It was good and I'm glad I went but Iron Man is still the best summer movie so far. Goodnight and I promise to post my cards I made tomorrow night. Peace Cynthia

Sorry again that I have been absent
I guess It's time to say I'm going to take a few weeks off and will be back in full swing after Baseball Tournaments. Sometime after the 10th of July. Everyone have a wonderful 4th and hopefully I will have exciting stamping news when I return. Peace Cynthia

Sorry I've been a bad blogger!!!
Baseball and work are getting the better of me right now. But some real exciting things have been happening in the stamping world too. I shall be working very hard (between the 10-12 games we have in the next 3 days) to complete some projects. Hopefully by Monday I should have them posted. Wish me luck!
